A quick and satisfying breakfast recipe featuring smashed bacon, eggs, and cheese cooked on a Blackstone griddle or cast iron skillet to create a crispy crust and gooey interior.

  • 4 large eggs, room temperature
  • 1 cup shredded sharp cheddar cheese
  • 1 tablespoon unsalted butter
  • 2 tablespoons mayonnaise

  • 1/4 teaspoon smoked paprika (optional)
  • 2 green onions, thinly sliced
  • 4 sturdy sandwich rolls or buns, toasted (optional)

Instructions

  1. Heat your Blackstone griddle or cast iron skillet over medium heat. Lay the bacon slices flat and cook until crispy but still slightly pliable, about 5-7 minutes, flipping halfway through. Remove bacon and drain on paper towels, leaving bacon fat in the pan.
  2. In a bowl, whisk together the eggs, salt, pepper, and smoked paprika until frothy and well combined. Set aside.
  3. Return the skillet to medium-high heat and add butter. Once melted and bubbling, spread mayonnaise evenly over the surface of the skillet.
  4. Pour the egg mixture into the pan in a thin layer covering the bottom.
  5. Quickly chop the cooked bacon into bite-sized pieces and sprinkle evenly over the eggs. Follow immediately with shredded cheddar cheese.
  6. Using a metal spatula, press down firmly on the eggs, bacon, and cheese to flatten and compact everything. Cook undisturbed for about 2-3 minutes, until the edges are golden and crispy and the cheese is melting.
  7. Carefully flip the entire smash as one piece using your spatula, and cook for another 1-2 minutes to set the other side. If flipping whole is tricky, flip in sections.
  8. Slide the smash onto a toasted sandwich roll or plate. Garnish with sliced green onions and serve immediately while hot and gooey.
