A quick and easy icy slushie made with frozen strawberries and fresh lemon juice, perfect for cooling off on hot summer days and crowd-pleasing at gatherings.

Ingredients

  • 4 cups (600 grams) frozen strawberries
  • 4 large fresh lemons (about 1 cup or 240 ml fresh lemon juice)
  • ½ to ¾ cup (100150 grams) granulated sugar, adjust to taste
  • 2 cups (480 ml) cold water
  • 1 cup (240 ml) ice cubes (optional, for frostier texture)
  • Fresh strawberries for garnish (optional)
  • Mint leaves for garnish (optional)

Instructions

  1. Roll the lemons on the counter to loosen the juice. Cut them in half and juice to extract about 1 cup (240 ml) of fresh lemon juice, removing any seeds.
  2. Add frozen strawberries and sugar (start with ½ cup) to the blender. Pulse a few times to break up the berries.
  3. Pour in the fresh lemon juice and cold water. Blend on high until smooth and slushy.
  4. If desired, add ice cubes for a frostier texture and blend again.
  5. Taste and adjust sweetness or tartness by adding more sugar or lemon juice, blending briefly after adjustments.
  6. Pour into a large pitcher or individual glasses. Garnish with fresh strawberries and mint leaves if desired. Serve immediately.

Notes

Use fully frozen strawberries for best icy texture. Blend in batches if blender is small. Adjust sugar and lemon juice to taste. For a fizz, add sparkling water after blending. Store leftovers in freezer up to 2 days and re-blend before serving.
