Ingredients

  • Spiral-cut ham (about 7-8 pounds / 3.2-3.6 kg)
  • Honey (1/2 cup / 120 ml)
  • Brown sugar (3/4 cup / 150 g)
  • Canned pineapple slices (about 8 slices, drained)
  • Dijon mustard (2 tablespoons / 30 ml)
  • Ground cinnamon (1/2 teaspoon)
  • Ground cloves (1/4 teaspoon)
  • Apple cider vinegar (1 tablespoon / 15 ml)
  • Unsalted butter (2 tablespoons / 28 g), softened
  • Black pepper (to taste)

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Remove the ham from packaging and pat dry with paper towels. Score the surface in a diamond pattern about 1/4 inch (0.6 cm) deep.
  3. In a small bowl, mix together honey, brown sugar, Dijon mustard, apple cider vinegar, cinnamon, and ground cloves until smooth and well combined.
  4. Place the ham on a roasting rack. Brush a generous layer of the glaze all over the surface, working it into the scored cuts. Arrange the pineapple slices on top, securing each with a toothpick if needed.
  5. Bake uncovered for about 1 hour and 30 minutes (roughly 10 minutes per pound), basting every 20 minutes with remaining glaze. Use a meat thermometer to check when the ham reaches 140°F (60°C).
  6. In the last 10 minutes, turn the oven to broil on low and carefully broil the ham to deepen the caramel color, watching closely to avoid burning.
  7. Remove the ham from the oven and let it rest for 10-15 minutes to allow juices to redistribute.
  8. Slice between the scored lines using a sharp carving knife and serve warm.

Notes

Apply the glaze in multiple layers during roasting to prevent burning and build a sticky crust. Score the ham deeply but do not cut through the meat. Tent the ham with foil if the pineapple slices caramelize too quickly. Let the ham rest before slicing to keep it juicy. Save some glaze for drizzling at the table.
