Instructions

  1. Prepare the Simple Syrup: In a saucepan, combine 1 cup (240 ml) water and 1 cup (200 g) granulated sugar. Add the sliced peaches. Bring to a gentle boil over medium heat, stirring occasionally until the sugar dissolves completely. Let it simmer for 5 minutes until the peaches soften and the syrup thickens slightly. Remove from heat and let steep for 15 minutes to infuse flavor.
  2. Strain the Syrup: Using a fine mesh strainer, strain the syrup into a clean bowl or pitcher, pressing lightly on the peaches to extract extra flavor. Discard the peach slices or save them for a topping on desserts.
  3. Brew the Tea: In a separate pot, bring 4 cups (1 liter) of water to a boil. Remove from heat and add the 4 black tea bags. Let steep for 5-7 minutes, watching to avoid bitterness. Remove the tea bags and discard.
  4. Combine Tea and Syrup: Once the tea has cooled to room temperature (about 10-15 minutes), stir in the peach simple syrup. Add 1 tablespoon of fresh lemon juice if using.
