Fresh Coconut Water Mango Refresher with Lime

A bright, refreshing summer drink combining ripe mangoes, fresh coconut water, and lime juice for a naturally sweet and tangy beverage that’s quick and easy to make.

Ingredients

  • 2 cups (about 300g) ripe mangoes, peeled and chopped
  • 1 ½ cups (360ml) fresh coconut water
  • 2 tablespoons (30ml) freshly squeezed lime juice
  • 12 teaspoons honey or agave syrup (optional)
  • 1 cup (150g) ice cubes
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Peel and chop ripe mangoes into chunks (about 2 cups or 300g). If mango is firm, let sit at room temperature to soften.
  2. Roll 2 medium limes on the counter, cut in half, and juice until you have about 2 tablespoons (30ml). Strain to remove seeds and pulp if desired.
  3. In a blender, combine mango chunks, 1 ½ cups (360ml) fresh coconut water, and freshly squeezed lime juice. Add 1-2 teaspoons honey or agave syrup if mangoes aren’t very sweet.
  4. Blend on high for about 45 seconds until smooth and slightly frothy.
  5. Add about 1 cup (150g) ice cubes and pulse a few times to lightly crush the ice, chilling the drink without watering it down.
  6. Taste and adjust by adding more lime juice for tang or honey for sweetness if desired. Blend briefly again if additions are made.
  7. Pour into tall glasses, garnish with fresh mint leaves if desired, and serve immediately.

Notes

If you don’t have a blender, mash mango with a fork and whisk with coconut water and lime juice for a chunkier texture. Add ice just before serving to avoid dilution. Use fresh lime juice for best flavor. Adjust sweetness with honey or agave syrup as needed.
