  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg (optional)
  • 1 teaspoon vanilla extract
  • 2 medium apples, peeled, cored, and thinly sliced (Granny Smith or Honeycrisp preferred)
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat oven to 425°F (220°C) and place cast iron skillet inside to heat for about 10 minutes.
  2. Peel, core, and thinly slice apples. Toss with 1 teaspoon cinnamon and a pinch of sugar if desired.
  3. In a mixing bowl, whisk 3 large eggs until frothy (about 1 minute). Add milk and vanilla extract, whisk again.
  4. Slowly add sifted flour, sugar, salt, and nutmeg. Whisk until smooth and no lumps remain; batter should be thin, like heavy cream.
  5. Carefully remove hot skillet from oven. Add melted butter and swirl to coat bottom and sides evenly.
  6. Pour batter immediately into hot skillet.
  7. Arrange cinnamon-coated apple slices evenly over the batter, pressing slightly but not sinking them.
  8. Bake in oven for 18-22 minutes until pancake puffs up with golden, crisp edges and soft center.
  9. Remove from oven and let cool 2-3 minutes. Dust with powdered sugar if desired, slice, and serve warm.
