Ingredients

Scale
  • 2 ¼ teaspoons (1 packet) active dry yeast
  • 1 cup (240 ml) warm whole milk (about 110°F/43°C)
  • ¼ cup (50 g) granulated sugar
  • ¼ cup (56 g) unsalted butter, melted (plus more for brushing)
  • 1 large egg, room temperature
  • 3 ¼ cups (410 g) all-purpose flour
  • 1 teaspoon salt
  • ½ cup (113 g) unsalted butter, softened (for cinnamon butter)
  • ⅓ cup (40 g) powdered sugar
  • 1 tablespoon ground cinnamon
  • 1 teaspoon vanilla extract
  • Pinch of salt (for cinnamon butter)

Instructions

  1. Activate the yeast: In a large mixing bowl, combine the warm milk (110°F/43°C) with the sugar and yeast. Stir gently and let it sit for 5 to 10 minutes until frothy and bubbly.
  2. Mix wet ingredients: Add the melted butter and egg to the yeast mixture. Stir until combined.
  3. Combine dry ingredients: In a separate bowl, whisk together the flour and salt. Gradually add this to the wet ingredients, mixing with a wooden spoon or dough hook attachment if using a stand mixer.
  4. Knead the dough: Knead on medium speed for about 6 minutes (or 8-10 minutes by hand on a floured surface) until smooth, elastic, and slightly tacky but not sticky. Add a little more flour if too sticky.
  5. First rise: Lightly oil a clean bowl and place the dough inside, turning once to coat. Cover with a damp towel or plastic wrap and let it rise in a warm place for about 1 hour, or until doubled in size.
  6. Shape the rolls: Punch down the dough gently to release air. Divide into 12 equal pieces (about 2 ounces or 56 g each). Shape each into a smooth ball by tucking edges under.
  7. Second rise: Arrange the rolls close but not touching on a greased baking sheet or round cake pan. Cover loosely and let rise another 30 to 40 minutes until puffy.
  8. Bake: Preheat oven to 350°F (175°C). Bake rolls for 18 to 22 minutes until golden brown and cooked through (internal temp about 190°F/88°C).
  9. Prepare cinnamon butter: While rolls bake, beat softened butter with powdered sugar, cinnamon, vanilla, and a pinch of salt until smooth and fluffy. Set aside at room temperature.
  10. Brush and serve: Immediately after baking, brush rolls generously with melted butter. Serve warm with cinnamon butter spread.

Notes

Milk temperature is crucial; too hot kills yeast, too cold prevents rising. Knead until dough is smooth and elastic but not sticky. Allow both rises fully for best texture. Brush rolls with melted butter immediately after baking for a glossy finish. Cinnamon butter is optional but highly recommended for best flavor. Dough can be refrigerated after first rise for up to 24 hours. Reheat rolls with a light butter brush to refresh softness.
