Instructions

  1. Preheat your oven to 450°F (230°C).
  2. Carefully separate 2 large eggs, placing the yolks gently in small bowls to keep whole.
  3. In a clean, dry mixing bowl, add a pinch of salt to the egg whites. Using an electric mixer or whisk, beat the whites until stiff peaks form.
  4. Gently fold in about ½ teaspoon of everything seasoning and a pinch of black pepper into the whipped egg whites, keeping them airy.
  5. Spoon the whipped whites onto a parchment-lined baking sheet, creating two mounds with a small well in the center of each for the yolks.
  6. Bake the whites for about 3 minutes until edges turn golden and whites are set but still soft.
  7. Remove the baking sheet and carefully place one yolk into each white nest.
