Flavorful Dumpling Lasagna Recipe with Chili Crisp Ricotta

A comforting and unique lasagna using wonton wrappers as dumpling layers, combined with a spicy chili crisp ricotta and rich meat sauce for a delicious fusion of Italian and Asian flavors.

  • All-purpose flour (for dusting and sealing dumplings)
  • 1 cup ricotta cheese (whole milk preferred)
  • 23 tablespoons chili crisp sauce
  • 1 teaspoon fresh lime juice
  • Salt to taste
  • 1 pound ground pork or beef
  • 3 cloves garlic, minced
  • 1 medium onion, finely chopped
  • 28 oz crushed tomatoes (San Marzano preferred)
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 tablespoons olive oil
  • Salt and black pepper to taste
  • A handful fresh basil, chopped
  • 1/2 cup grated Parmesan cheese (about 50 g)

Instructions

  1. Heat 2 tablespoons olive oil in a large skillet over medium heat. Add chopped onion and sauté until translucent, about 5 minutes.
  2. Add minced garlic and cook for another minute until fragrant.
  3. Add ground pork or beef, breaking it apart with a wooden spoon. Cook until browned and no longer pink, about 7-8 minutes.
  4. Season with salt, black pepper, dried oregano, and red pepper flakes if using.
  5. Pour in crushed tomatoes, stir well, and reduce heat to low. Let sauce simmer gently for 20-25 minutes, stirring occasionally until slightly thickened but still saucy.
  6. In a bowl, combine ricotta cheese with 2-3 tablespoons chili crisp sauce and 1 teaspoon fresh lime juice. Stir until smooth and well blended. Adjust salt to taste.
  7. Preheat oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  8. Spread a thin layer of meat sauce on the bottom of the dish.
  9. Place a single layer of wonton wrappers to cover the surface, overlapping slightly.
  10. Dollop spoonfuls of chili crisp ricotta evenly over the wrappers, then sprinkle some chopped fresh basil.
  11. Repeat layers: meat sauce, wonton wrappers, ricotta mixture, basil. Aim for 3-4 layers, finishing with a layer of meat sauce on top.
  12. Sprinkle grated Parmesan cheese generously over the final layer.
  13. Cover the dish loosely with foil and bake for 25 minutes.
  14. Remove foil and bake an additional 10-15 minutes until bubbly and golden on top.
  15. Let the dish rest for 10 minutes before serving to let flavors meld and make slicing easier.

Notes

If wonton wrappers start to dry out during assembly, lightly mist them with water or cover with a damp towel to keep pliable. Use cool or room temperature ricotta mixture to avoid runny layers. Do not overfill layers to prevent sogginess. Let the lasagna rest 10 minutes before slicing for best results. For gluten-free, substitute wonton wrappers with gluten-free dumpling wrappers or thin rice paper sheets. For dairy-free, use plant-based ricotta and check chili crisp ingredients.
