  • 2 medium firm apples (Honeycrisp or Fuji), cored and sliced
  • 1 large yellow onion, peeled and cut into thick wedges

  • 1 tablespoon fresh thyme, chopped (or 1 teaspoon dried thyme)
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Optional: 1 teaspoon apple cider vinegar or Dijon mustard for marinade

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Pat pork chops dry with paper towels. Season both sides generously with salt, pepper, garlic powder, and smoked paprika.
  3. In a large mixing bowl, toss sliced apples, onion wedges, olive oil, thyme, and a pinch of salt until evenly coated.
  4. Spread apples and onions evenly on a large rimmed baking sheet, leaving room for the pork chops.
  5. Place pork chops on top or nestled among the apples and onions.
  6. Optional: Drizzle apple cider vinegar or brush Dijon mustard on pork chops before baking.
  7. Bake in the preheated oven for 22-25 minutes. Halfway through, turn pork chops over for even cooking and caramelization.
  8. Check pork chops reach an internal temperature of 145°F (63°C) or juices run clear.
  9. Let pork chops rest for 5 minutes before serving.
