  • 1 cup strawberries, hulled and sliced
  • ½ cup blueberries
  • ½ cup kiwi, peeled and sliced
  • ½ cup mandarin orange segments
  • Fresh mint leaves for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line your baking sheet or pizza pan with parchment paper.
  2. Cream the butter and sugar together in a large bowl using an electric mixer until light and fluffy, about 3-4 minutes.
  3. Add the egg, lemon zest, and vanilla extract to the butter mixture and beat until combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined.
  5. Press the dough evenly onto the prepared pan, smoothing it into a circle or rectangle about ¼ inch thick.
  6. Bake for 15-18 minutes, or until edges start to turn golden. Let cool completely on a wire rack (about 30-40 minutes).
  7. Chill mixing bowl and beaters for 10 minutes. Beat cold heavy cream with powdered sugar and vanilla extract until soft peaks form. Optionally add lemon juice.
  8. Spread whipped cream frosting evenly over the cooled cookie base.
  9. Arrange fresh fruit on top in a colorful pattern and garnish with mint leaves if desired.
  10. Refrigerate the fruit pizza for at least 30 minutes before slicing and serving.
