  • 1 cup (4.4 oz / 125g) all-purpose flour (can substitute almond flour for gluten-free)
  • 1 large egg (room temperature)
  • 2 tablespoons everything bagel seasoning
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 tablespoons olive oil
  • Optional toppings: fresh herbs (dill, chives, thyme), drizzle of honey, shredded cheese (mozzarella or parmesan), pinch of cayenne pepper or red pepper flakes

Instructions

  1. Preheat your oven to 425°F (220°C). Place your baking sheet or pizza stone inside to heat up for about 10 minutes.
  2. In a large bowl, combine cottage cheese, egg, and olive oil. Stir gently until mostly smooth with some small lumps remaining.
  3. In a separate bowl, whisk together flour, baking powder, salt, and everything bagel seasoning.
  4. Gradually add the dry ingredients to the wet mixture, stirring until a sticky dough forms. If too wet, add flour a tablespoon at a time.
  5. Place the dough onto a sheet of parchment paper. Flatten into a roughly 10-inch (25 cm) circle about 1/4 inch (6 mm) thick using hands or a rolling pin.
  6. Carefully slide the parchment paper with dough onto the preheated baking sheet or stone.
  7. Bake for 15-18 minutes until golden and crisp around the edges. Rotate halfway through baking if needed.
  8. Optional: Sprinkle additional everything bagel seasoning and drizzle olive oil on top immediately after baking.
  9. Let the flatbread rest for 5 minutes before slicing to allow the crust to firm up.

Preheat the baking surface to ensure a crispy crust. Do not overmix the dough to keep it tender. Let the flatbread cool slightly before slicing for cleaner cuts.
