A quick and easy skillet cookie recipe featuring nutty brown butter and melty chocolate chips, delivering crispy edges and a gooey center perfect for any dessert craving.

Ingredients

Scale
  • 6 tablespoons (85g) unsalted butter, browned
  • ⅓ cup (67g) granulated sugar
  • ⅓ cup packed (70g) light brown sugar
  • 1 large egg, room temperature
  • 1 teaspoon pure vanilla extract
  • 1 cup (125g) all-purpose flour (can substitute almond flour for gluten-free)
  • ¼ teaspoon baking soda
  • ⅛ teaspoon salt
  • ½ cup (90g) chocolate chips or chunks (semi-sweet preferred)

Instructions

  1. Brown the butter: Place 6 tablespoons of unsalted butter in a medium saucepan over medium heat. Stir continuously as it melts, foams, and browns, producing a nutty aroma and brown specks. Remove from heat once browned and let cool slightly for 5 minutes without solidifying.
  2. Mix sugars and wet ingredients: In a mixing bowl, combine granulated sugar and light brown sugar. Pour in the warm browned butter and stir until combined. Add the egg and vanilla extract, mixing until smooth.
  3. Combine dry ingredients: In a separate bowl, whisk together flour, baking soda, and salt.
  4. Build the dough: Slowly add dry ingredients to the wet mixture, stirring gently until no dry streaks remain. Fold in chocolate chips evenly.
  5. Prepare skillet and shape dough: Lightly grease an 8-inch cast iron skillet with butter or non-stick spray. Spread the dough evenly in the skillet about ½ to ¾ inch thick.
  6. Bake: Preheat oven to 350°F (175°C). Bake the skillet cookie on the middle rack for 20-25 minutes until edges are golden and crisp and the center is soft and slightly underbaked.
  7. Cool and serve: Remove skillet from oven using mitts. Let cool for 5 minutes to set but serve warm. Optionally serve with ice cream.

Notes

Watch the butter carefully while browning to avoid burning. Do not overmix the dough to keep cookies tender. Tent with foil if edges brown too quickly. Let the cookie rest a few minutes after baking for best texture. Variations include adding nuts, using almond flour for gluten-free, or coconut oil for dairy-free.
