These crispy air fryer pizza rolls are a quick, easy, and delicious homemade snack with a golden, crunchy crust and melty cheesy filling. Perfect for busy weeknights, parties, or a satisfying treat.

  • 2 ½ cups (315g) all-purpose flour, sifted
  • 2 ¼ tsp instant yeast (one packet)
  • 1 tbsp granulated sugar
  • 1 cup (240ml) warm water (about 110°F / 43°C)
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 ½ cups (about 150g) shredded mozzarella cheese
  • ½ cup (about 50g) mini pepperoni slices or chopped cooked sausage
  • ½ cup (120ml) pizza sauce (homemade or jarred)
  • 2 tbsp grated Parmesan cheese
  • 1 tsp dried Italian seasoning
  • ½ tsp garlic powder
  • Red pepper flakes (optional)
  • 1 tbsp olive oil or melted butter (for brushing)
  • Grated Parmesan and dried herbs (optional, for finishing touch)

Instructions

  1. Activate the yeast by combining warm water (110°F/43°C), sugar, and instant yeast in a small bowl. Stir gently and let sit for 5–10 minutes until frothy.
  2. In a large bowl, mix flour and salt. Add the yeast mixture and olive oil. Stir until a shaggy dough forms.
  3. Transfer dough to a floured surface and knead for 8–10 minutes until smooth and elastic. Add more flour if dough is too sticky.
  4. Place dough in a lightly oiled bowl, cover with a damp cloth, and let rise in a warm spot for 1 hour or until doubled in size.
  5. While dough rises, combine shredded mozzarella, pepperoni slices, pizza sauce, Parmesan, Italian seasoning, and garlic powder in a bowl. Mix gently.
  6. Punch down the risen dough and roll it out on a floured surface into a 12×10 inch (30×25 cm) rectangle.
  7. Spread the filling evenly over the dough, leaving about ½ inch (1.3 cm) border.
  8. Roll the dough tightly from the long edge into a log. Pinch the seam to seal.
  9. Cut the log into 12 equal slices using a sharp knife.
  10. Lightly brush each roll with olive oil or melted butter.
  11. Preheat air fryer to 370°F (188°C) for 3 minutes.
  12. Arrange rolls in the air fryer basket with space between them.
  13. Air fry for 10–12 minutes until golden and crispy outside and cheese is bubbly inside. Halfway through, brush rolls with more oil for extra crunch if desired.
  14. Let rolls rest for 3–5 minutes before serving.

Notes

If rolls puff up too much and crack, seal edges more firmly or chill dough briefly before rolling. Do not overcrowd air fryer basket for best crisping. Brushing rolls with oil or butter before and halfway through cooking enhances golden color and crunch. Dough can be prepared ahead and refrigerated up to 24 hours. For reheating leftovers, use air fryer at 350°F for 3–5 minutes to maintain crispiness. Freeze unbaked rolls on a tray before storing in freezer bag; cook from frozen adding a few extra minutes.
