  • 4 cups vegetable broth (low-sodium preferred)
  • ½ cup heavy cream (120 ml) or coconut cream for dairy-free
  • Fresh lemon zest from 1 lemon
  • 4 to 6 thin slices prosciutto
  • 1 tablespoon butter (optional, for sautéing onions)

Instructions

  1. Preheat oven to 425°F (220°C). Toss asparagus with 1 tablespoon olive oil, salt, and pepper. Spread on a baking sheet and roast for 15 minutes, turning halfway, until tender and caramelized.
  2. While asparagus roasts, heat a non-stick skillet over medium heat. Cook prosciutto slices 2-3 minutes per side until crisp. Drain on paper towels and keep warm.
  3. In a large pot or Dutch oven, heat remaining 1 tablespoon olive oil or butter over medium heat. Add diced onion and a pinch of salt; sauté for 5 minutes until translucent.
  4. Add minced garlic and cook for 30 seconds until fragrant, avoiding browning.
  5. Add roasted asparagus to the pot, pour in vegetable broth, and simmer gently for 10 minutes.
  6. Puree soup with an immersion blender until smooth and creamy. If using a countertop blender, blend in batches carefully.
  7. Stir in heavy cream and lemon zest. Warm on low heat for 2-3 minutes without boiling. Adjust seasoning with salt and pepper.
  8. Serve hot, topped with crispy prosciutto pieces.

Notes

If soup is too thick, add a splash of broth or cream to loosen. Save a few asparagus tips for garnish. Cook prosciutto low and slow to avoid bitterness. Do not boil soup after adding cream to prevent curdling. Lemon zest adds brightness and balances richness.
