  • 1 pound boneless skinless chicken breasts, cut into bite-size pieces
  • 8 ounces penne or rigatoni pasta (gluten-free pasta can be used)
  • 3 cloves garlic, minced
  • 1/3 cup chopped sun-dried tomatoes (preferably oil-packed)
  • 2 cups fresh baby spinach leaves
  • 1 cup heavy cream (or half-and-half for a lighter version)
  • 3 cups low sodium chicken broth
  • 1 cup freshly grated Parmesan cheese
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 teaspoon Italian seasoning (blend of dried basil, oregano, and thyme)
  • Salt and pepper to taste
  • Red pepper flakes (optional)

Instructions

  1. Cut chicken breasts into bite-size pieces and season with salt, pepper, and Italian seasoning.
  2. Heat olive oil and butter in a large deep skillet or sauté pan over medium-high heat. Add chicken in a single layer and cook 4-5 minutes until golden but not fully cooked through. Remove chicken and set aside.
  3. Lower heat to medium and add minced garlic and chopped sun-dried tomatoes to the same pan. Cook 1-2 minutes until fragrant, stirring constantly.
  4. Pour in chicken broth and heavy cream. Stir to combine and bring to a simmer.
  5. Add pasta to the pan, ensuring it is submerged in the liquid. Return chicken to the pan.
  6. Cover and reduce heat to medium-low. Cook 15-18 minutes, stirring occasionally to prevent sticking, until pasta is tender and chicken is cooked through. Add more broth or water if liquid reduces too fast.
  7. Stir in fresh spinach and Parmesan cheese. Cook uncovered for 2-3 minutes until spinach wilts and sauce thickens slightly.
  8. Taste and adjust seasoning with salt, pepper, and optional red pepper flakes. Remove from heat and let rest a few minutes before serving.

Notes

Season and cook chicken in batches if pan is crowded to brown properly. Use fresh garlic for best flavor. Stir occasionally but not constantly to prevent pasta sticking. Adjust liquid as needed to keep sauce creamy but not soupy. Add spinach at the end to preserve color and freshness. For dairy-free, substitute heavy cream with coconut milk and Parmesan with nutritional yeast.
