  • 8 oz (225 g) cream cheese, softened
  • 1/3 cup (50 g) sun-dried tomatoes, finely chopped (oil-packed or rehydrated dry-packed)
  • 1/2 cup (75 g) feta cheese, crumbled
  • A handful fresh basil leaves, finely chopped
  • 1/2 teaspoon garlic powder
  • Zest of one lemon
  • Freshly ground black pepper, to taste
  • 1 tablespoon olive oil (optional, for drizzling inside roll-ups)
  • 1 cup (30 g) spinach or arugula leaves (optional)

Instructions

  1. In a medium mixing bowl, combine softened cream cheese, crumbled feta cheese, and finely chopped sun-dried tomatoes. Mix well with a spatula until smooth but slightly chunky.
  2. Add garlic powder, lemon zest, and freshly ground black pepper to taste. Stir in chopped fresh basil leaves.
  3. Place one flatbread or tortilla on a clean surface. Optionally, lightly brush with olive oil.
  4. Spread a generous, even layer of the cheese mixture over the flatbread, leaving about a 1/2-inch border around the edges.
  5. Scatter fresh spinach or arugula leaves evenly over the cheese layer if using.
  6. Starting from one edge, roll the flatbread tightly into a log without squeezing out the filling.
  7. Wrap the rolled flatbread tightly in plastic wrap or parchment paper and refrigerate for at least 30 minutes to firm up the filling.
  8. Unwrap and slice the roll into 1-inch thick pinwheel rounds using a sharp knife.
  9. Arrange the pinwheels on a serving platter and serve chilled or at room temperature.

Notes

Soak dry sun-dried tomatoes in warm water for 10 minutes before chopping if dry. Chill roll-ups for at least 30 minutes to firm filling and ease slicing. Use a serrated or very sharp knife for clean cuts. For a vegan version, substitute cream cheese and feta with plant-based alternatives. Optional additions include roasted red peppers, Kalamata olives, or fresh dill.
