  • A handful fresh basil, chopped (for garnish)

Instructions

  1. Pat dry 4 boneless, skinless chicken breasts (about 6 oz or 170 g each). Season generously with salt, pepper, and 1 teaspoon Italian seasoning. Let rest for 5 minutes.
  2. Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add chicken breasts and cook for 5-6 minutes per side until golden brown and cooked through (internal temperature 165°F/74°C). Remove and set aside on a warm plate.
  3. Lower heat to medium. Add 1 tablespoon butter to the skillet. Once melted, add minced garlic and chopped sun-dried tomatoes. Stir for about 1 minute until fragrant, being careful not to burn the garlic.
  4. Pour in ½ cup chicken broth, scraping up any browned bits from the pan. Let simmer for 2 minutes to reduce slightly.
  5. Stir in 1 cup heavy cream and ½ cup freshly grated Parmesan cheese. Let the sauce gently bubble for 3-4 minutes, stirring often until thickened. Add more broth or cream if sauce becomes too thick.
  6. Add ¼ teaspoon red pepper flakes (optional), salt, and pepper to taste. Adjust seasoning as needed.
  7. Return the cooked chicken breasts to the pan, nestling them into the sauce. Spoon sauce over the chicken and simmer together for 2 minutes to marry flavors.
  8. Sprinkle chopped fresh basil over the dish just before serving.
