  • 4 ounces cream cheese, softened
  • 1/2 cup beer (preferably malty amber ale or lager)
  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 teaspoon Worcestershire sauce
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1/4 teaspoon smoked paprika (optional)

Instructions

  1. Shred 8 ounces of sharp cheddar cheese; freshly shredded cheese melts better and gives a smoother texture.
  2. Soften 4 ounces of cream cheese to room temperature; microwave for 10 seconds if needed but do not melt completely.
  3. In a medium mixing bowl, combine cream cheese and 1/4 cup mayonnaise. Beat with an electric mixer on medium speed for 1-2 minutes until smooth and creamy.
  4. Add 1 tablespoon Dijon mustard, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, 1 teaspoon Worcestershire sauce, and 1/4 teaspoon smoked paprika (if using). Mix until fully incorporated, about 30 seconds.
  5. Slowly pour in 1/2 cup beer while mixing on low speed to prevent clumping. Scrape down the sides as needed.
  6. Fold in shredded cheddar cheese gently with a spatula or mix briefly on low speed to combine without overmixing.
  7. Season with salt and freshly ground black pepper to taste, starting with 1/4 teaspoon salt and a few twists of pepper.
  8. Cover the bowl with plastic wrap and refrigerate for at least 1 hour to let flavors meld and dip firm up.
  9. Before serving, stir and adjust consistency with a splash of beer or mayonnaise if too thick.

Notes

Use freshly shredded sharp cheddar for best melt and flavor. Pour beer slowly to avoid clumping. Chill at least 1 hour before serving. For gluten-free, use gluten-free beer or substitute with chicken broth or sparkling water with vinegar. Variations include adding jalapeños or cayenne for spice, or crumbled bacon for savory depth.
