  • 4 salmon fillets (about 6 oz / 170 g each), fresh or thawed, skin-on optional
  • 4 garlic cloves, minced
  • 1 cup (240 ml) heavy cream
  • 1/2 cup (75 g) sun-dried tomatoes, chopped (oil-packed preferred)
  • 2 cups (about 60 g) fresh baby spinach
  • Salt and freshly cracked black pepper to taste
  • Optional: pinch of red pepper flakes

Instructions

  1. Pat the salmon fillets dry with paper towels. Season both sides lightly with salt and freshly cracked black pepper.
  2. Heat 1 tablespoon of olive oil or butter in a large skillet over medium-high heat. Add salmon fillets skin-side down if using skin-on. Cook for 4-5 minutes without moving to get a golden crust.
  3. Flip the salmon and cook for another 3-4 minutes until just cooked through. Remove salmon from the pan and set aside.
  4. Lower heat to medium. Add minced garlic to the same skillet and sauté for about 30 seconds until fragrant, stirring constantly to avoid burning.
  5. Add chopped sun-dried tomatoes and stir briefly. Pour in the heavy cream and stir to combine. Let the sauce simmer gently for 3-4 minutes, stirring occasionally until slightly thickened.
  6. Add fresh baby spinach to the skillet and stir gently until wilted, about 2 minutes.
  7. Return the cooked salmon fillets to the pan, nestling them into the creamy sauce. Spoon sauce over the top and warm together for 1-2 minutes to meld flavors.
  8. Taste the sauce and adjust seasoning with salt and pepper if needed. Sprinkle red pepper flakes or fresh chopped parsley on top before serving if desired.

Notes

Do not overcook the salmon in the first step as it will continue cooking in the sauce. Use gentle simmering for the cream sauce to avoid curdling. Pre-minced garlic and oil-packed sun-dried tomatoes can speed up prep. For dairy-free, substitute heavy cream with full-fat coconut milk and butter with olive oil.
