  • 1/2 cup granulated sugar
  • 1/4 cup light brown sugar
  • 2 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg (optional)
  • 1 tablespoon lemon juice
  • 1/2 cup caramel sauce (store-bought or homemade)
  • 1 cup rolled oats (old-fashioned)
  • 1/2 cup all-purpose flour
  • 1/2 cup light brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1 unbaked 9-inch pie crust (homemade or store-bought)

Instructions

  1. Preheat the oven to 375°F (190°C) and position a rack in the middle.
  2. Lay the unbaked pie crust in a 9-inch pie dish. Press into bottom and sides, trim excess, and optionally crimp edges. Prick bottom lightly with a fork to prevent bubbling.
  3. In a large bowl, toss sliced apples with granulated sugar, brown sugar, flour, cinnamon, nutmeg (if using), and lemon juice until well coated.
  4. Pour half of the caramel sauce evenly into the bottom of the pie crust. Spoon in the apple mixture and spread smoothly. Drizzle remaining caramel sauce over the apples.
  5. In a medium bowl, combine rolled oats, flour, brown sugar, cinnamon, and salt. Add cold cubed butter and work into dry ingredients with a pastry cutter, forks, or fingertips until mixture resembles coarse crumbs.
  6. Evenly sprinkle the oat crumble topping over the apple filling without pressing down.
  7. Bake the pie on the middle rack for 45–55 minutes until topping is golden brown and filling bubbles around edges. Cover with foil halfway through if topping browns too quickly.
  8. Cool the pie on a wire rack for at least 2 hours before slicing to allow filling to set.

Notes

Keep butter cold when making oat crumble to ensure a crisp topping. Slice apples evenly about 1/4 inch thick for uniform cooking. Use lemon juice to brighten apples and prevent browning. Cover pie with foil if topping browns too fast. Let pie cool fully before slicing for best texture. Baking sheet under pie can catch drips and keep oven clean.
