Instructions

  1. Preheat your oven to 350Β°F (175Β°C). Line two baking sheets with parchment paper or lightly grease them.
  2. Soak 1 cup (150 g) raisins in warm water for 10 minutes. Drain and pat dry.
  3. In a medium bowl, whisk together 1 1/2 cups (135 g) rolled oats, 1 cup (125 g) all-purpose flour, 1/2 teaspoon baking soda, 1 teaspoon cinnamon, and 1/4 teaspoon salt. Set aside.
  4. In a large bowl, beat 1/2 cup (113 g) softened unsalted butter, 2 tablespoons vegetable oil, 3/4 cup (150 g) packed brown sugar, and 1/4 cup (50 g) granulated sugar until light and fluffy, about 2-3 minutes.
  5. Beat in 1 large egg and 1 teaspoon vanilla extract until fully combined.
  6. Gradually add the dry oat mixture to the wet ingredients and stir gently until just combined. Avoid overmixing.
  7. Fold in the soaked raisins and nuts if using.
  8. Use a cookie scoop or spoon to drop rounded tablespoons of dough about 2 inches apart on prepared baking sheets.
  9. Bake for 10-12 minutes, until edges are lightly golden but centers still look soft.
  10. Let cookies rest on the baking sheet for 5 minutes before transferring to a cooling rack to cool completely.
