  • 3 tablespoons unsalted butter, melted
  • 1 large egg, room temperature
  • ½ cup (100g) brown sugar, packed
  • 2 tablespoons ground cinnamon
  • 3 tablespoons unsalted butter, softened
  • 4 ounces (115g) cream cheese, softened
  • ¼ cup (30g) powdered sugar
  • 1 teaspoon vanilla extract
  • 12 tablespoons milk (to thin as needed)

Instructions

  1. Activate the Yeast (5 minutes): Warm milk to about 110°F (43°C). Stir in yeast and 1 tablespoon sugar. Let sit until foamy, about 5 minutes.
  2. Mix the Dough (10 minutes): Combine flour, remaining sugar, and salt. Add melted butter, egg, and yeast mixture. Mix and knead until smooth and elastic, about 7-8 minutes.
  3. First Rise (1 to 1.5 hours): Place dough in oiled bowl, cover, and let rise in warm place until doubled in size.
  4. Prepare the Filling: Mix brown sugar, cinnamon, and softened butter until spreadable.
  5. Roll Out the Dough (5 minutes): Punch down dough and roll into 12×16 inch rectangle. Spread cinnamon filling evenly, leaving a border.
  6. Shape the Rolls (10 minutes): Roll dough tightly into a log. Slice into 12 pieces. Shape each slice into a heart by pressing center and pinching bottom edge.
  7. Second Rise (30-45 minutes): Place rolls on parchment-lined baking sheet, cover, and let rise until puffy.
  8. Bake (20-25 minutes): Preheat oven to 350°F (175°C). Bake rolls until golden brown. Tent with foil if browning too fast.
  9. Prepare the Glaze: Beat cream cheese, powdered sugar, vanilla, and milk until smooth. Adjust thickness as needed.
  10. Glaze and Serve: Spread glaze over warm rolls and serve.

Notes

Use warm milk to activate yeast properly. Knead dough until smooth and elastic but do not over-knead. Softened butter spreads evenly in filling. Allow both rises for best texture. If dough is sticky, sprinkle flour sparingly. For dairy-free or vegan options, substitute butter and milk with plant-based alternatives and replace egg with flax egg.
