Instructions

  1. Trim and pat dry the pork loin, removing any silver skin or excess fat.
  2. In a medium bowl, mix brown sugar, minced garlic, soy sauce, apple cider vinegar, onion powder, and black pepper until combined.
  3. Optional: Heat olive oil in a skillet over medium-high heat and brown the pork loin on all sides for 2-3 minutes each. Transfer to the crockpot.
  4. Place the pork loin in the crockpot and pour the brown sugar garlic mixture evenly over the top.
  5. Add water or chicken broth to the crockpot to keep the pork moist.
  6. Cover and cook on low for 6-8 hours or on high for 3-4 hours until the pork reaches an internal temperature of 145°F and is tender.
