  • 3/4 cup (150g) granulated sugar
  • 1/2 cup (100g) packed brown sugar
  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • 3/4 cup (90g) all-purpose flour
  • 1/2 cup (45g) unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 cup (90g) mini chocolate chips (optional)
  • 1 cup (120g) powdered sugar
  • 23 tablespoons milk or water
  • Food coloring gels (your team’s colors)
  • Sprinkles in team colors

Instructions

  1. Preheat oven to 350°F (175°C). Spray a mini muffin tin with nonstick spray or line with mini paper liners.
  2. In a medium bowl, melt butter in the microwave in 20-second bursts until fully melted. Let cool slightly.
  3. In a large bowl, whisk together granulated sugar and brown sugar. Add eggs and vanilla extract, whisking until smooth and slightly pale.
  4. In another bowl, sift together flour, cocoa powder, salt, and baking powder.
  5. Add melted butter to the sugar/egg mixture and mix until combined. Gently fold in the dry ingredients with a rubber spatula until just combined. Stir in mini chocolate chips if using.
  6. Spoon batter evenly into each mini muffin cavity (about 1 tablespoon per cup).
  7. Bake for 12–15 minutes, or until tops look set and a toothpick inserted comes out with a few moist crumbs.
  8. Let brownie bites cool in the pan for 5 minutes, then transfer to a wire rack to cool fully.
  9. In a small bowl, mix powdered sugar with milk or water until thick and drizzling consistency. Divide icing into bowls and tint each with food coloring gel.
  10. Drizzle colored icing over cooled brownie bites or use piping bags for stripes. Top with matching sprinkles while icing is wet. Let icing set for at least 15 minutes before serving.

Notes

For gluten-free, substitute almond flour or a 1:1 gluten-free blend. For dairy-free, use coconut oil or vegan butter and dairy-free chocolate chips. Don’t overmix the batter for best texture. Let brownie bites cool before decorating to prevent icing from melting. Store in an airtight container at room temperature for up to 3 days or freeze undecorated bites for up to 2 months.
