Soft & Chewy Reese’s Peanut Butter Cookies

Soft, slightly gooey cookies bursting with Reese’s peanut butter flavor, perfect for any occasion and dangerously easy to whip up.

  • 1 cup unsalted butter, softened to room temperature
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 1 cup creamy peanut butter
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups Reese’s Pieces

Instructions

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes).
  3. Add the peanut butter, eggs, and vanilla extract. Mix until fully combined, scraping down the sides as needed.
  4. In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
  5. Gradually add the dry ingredients into the wet mixture, mixing just until combined. Be careful not to overmix!
  6. Fold in the Reese’s Pieces gently with a spatula. Make sure they’re evenly distributed throughout the dough.
  7. Using a cookie scoop or tablespoon, drop dough balls onto the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are just lightly golden. The centers should still look slightly soft.
  9. Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Notes

Chill the dough for 30 minutes if it feels sticky or if cookies spread too much during baking. Press additional Reese’s Pieces into the tops of the cookies after baking for a decorative finish.
