These savory BBQ bacon cheeseburger sliders are quick and easy to make, perfect for summer parties and casual get-togethers. Bite-sized patties layered with melty cheese, crispy bacon, and tangy BBQ sauce on soft mini buns make them a crowd-pleaser.

  • 1 pound (450 g) ground beef (80/20 blend)
  • 12 mini slider buns (brioche recommended)
  • 6 slices bacon, cooked crisp and halved
  • 6 slices sharp cheddar cheese, halved
  • ½ cup (120 ml) BBQ sauce
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • Salt and pepper to taste (about ¾ teaspoon salt and ½ teaspoon black pepper)
  • 2 tablespoons melted butter
  • Pickles, sliced (optional)
  • Lettuce and tomato slices (optional)

Instructions

  1. Cook the bacon in a cold skillet over medium heat until crispy, about 8 minutes, flipping occasionally. Drain on paper towels and halve the strips.
  2. In a mixing bowl, combine ground beef with onion powder, smoked paprika, garlic powder, salt, and pepper. Mix gently without overworking.
  3. Divide the mixture into 12 equal portions (about 1.3 ounces or 37 g each) and shape into thin, round patties slightly larger than the buns.
  4. Heat a skillet over medium-high heat until hot. Cook patties in a single layer for 3 minutes on the first side until browned.
  5. Flip patties and cook for another 2 minutes. Place half a slice of cheddar on each patty, cover skillet with lid or foil, and melt cheese for about 1 minute.
  6. Brush insides of slider buns with melted butter and a light smear of BBQ sauce. Toast in a preheated oven at 350°F (175°C) for 5-7 minutes until golden and slightly crisp.
  7. Assemble sliders by spreading a teaspoon of BBQ sauce on the bottom bun, adding a cheese-topped patty, a piece of crispy bacon, and optional pickles, lettuce, or tomato slices. Top with the bun.
  8. Serve sliders warm immediately.

Notes

Do not overmix the beef to keep patties tender. Brush buns with butter and BBQ sauce before toasting to prevent sogginess. Cook bacon and patties simultaneously to save time. Keep cooked patties warm in a low oven if assembling later. For gluten-free, use gluten-free buns or lettuce wraps. Variations include adding cayenne pepper for heat or swapping cheddar for pepper jack or gouda.
