A quick and easy watermelon mojito cocktail combining fresh watermelon, mint, lime, and white rum for a refreshing summer drink with a perfect balance of sweetness and zest.

  • 2 cups fresh watermelon chunks, seeds removed
  • 1012 fresh mint leaves, plus extra for garnish
  • Juice of 2 medium limes (about 2 tablespoons or 30 ml)
  • 2 ounces (60 ml) white rum per serving
  • 1 tablespoon (15 ml) simple syrup (homemade or store-bought)
  • 1/2 cup (120 ml) sparkling water or club soda
  • Ice cubes, preferably large

Instructions

  1. Cut fresh watermelon into chunks, removing seeds if any. Measure about 2 cups (roughly 300 grams).
  2. In a mixing glass, add 10-12 mint leaves and the watermelon chunks. Using a muddler or the back of a wooden spoon, gently press and twist to release the juices and mint oils without pulverizing.
  3. Pour in the fresh lime juice (about 2 tablespoons/30 ml) and 1 tablespoon (15 ml) of simple syrup. Stir gently to combine.
  4. Fill the glass with large ice cubes (about 1 cup or 240 ml), then pour in 2 ounces (60 ml) of white rum. Stir gently to chill and blend.
  5. Top with 1/2 cup (120 ml) sparkling water or club soda. Stir lightly to mix without losing bubbles.
  6. Garnish with a sprig of fresh mint and a lime wedge. Optionally add a small watermelon wedge on the rim.

Notes

Do not over-muddle the mint to avoid bitterness. Use large ice cubes to prevent quick dilution. Fresh lime juice is essential for brightness. Adjust sweetness by varying simple syrup. Chill glass before serving for best results. For a non-alcoholic version, omit rum and increase sparkling water or add coconut water.
