A light and bubbly sparkling cocktail combining fresh raspberries, floral rose water, and crisp Prosecco for a refreshing and elegant drink perfect for any occasion.

  • 1 cup (125 grams) fresh raspberries
  • 1 bottle (750 ml) dry or extra dry Prosecco
  • 1 teaspoon rose water (food-grade)
  • 2 tablespoons simple syrup (homemade or store-bought)
  • 1 tablespoon freshly squeezed lemon juice
  • Fresh mint leaves (a few sprigs, optional for garnish)

Instructions

  1. Gently crush about 3/4 cup (95 grams) of fresh raspberries in a mixing bowl using a muddler or wooden spoon to release the juice without pulverizing into a puree. Optionally strain through a fine mesh sieve to remove seeds.
  2. Stir in 2 tablespoons (30 ml) of simple syrup and 1 tablespoon (15 ml) of freshly squeezed lemon juice. Taste and adjust sweetness if necessary.
  3. Add 1 teaspoon (5 ml) of rose water to the raspberry mixture and stir gently.
  4. Optionally chill the raspberry-rose mixture in the refrigerator for 10-15 minutes to keep the cocktail crisp and refreshing.
  5. Pour about 2 tablespoons (30 ml) of the raspberry-rose mixture into each champagne flute.
  6. Slowly top each glass with about 5 ounces (150 ml) of chilled Prosecco, pouring gently to preserve bubbles.
  7. Garnish each glass with a few whole raspberries and a sprig of fresh mint.

Notes

Start with chilled ingredients and glasses for best bubbles. Avoid vigorous stirring after adding Prosecco to preserve fizz. Adjust simple syrup sweetness based on your Prosecco’s sweetness. Prepare raspberry-rose base up to 48 hours ahead and refrigerate. Use ripe, firm raspberries for best flavor and appearance.
