  • 1/4 cup (50g) granulated sugar
  • 1 tablespoon lemon juice
  • 2 tablespoons cornstarch
  • 1/2 cup (100g) brown sugar

Instructions

  1. Preheat your oven to 375Β°F (190Β°C). Line a 9×13-inch baking pan with parchment paper.
  2. In a large mixing bowl, whisk together flour, granulated sugar, baking powder, and salt.
  3. Add softened butter and blend into the dry ingredients using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  4. Mix in the egg to bind the crust, then press two-thirds of the mixture into the prepared baking pan to form an even layer.
  5. In another bowl, toss raspberries with granulated sugar, lemon juice, and cornstarch until evenly coated.
  6. Spread the raspberry mixture over the crust in an even layer.
  7. Take the remaining crumb mixture and stir in brown sugar. Sprinkle this over the raspberry filling, covering it completely.
  8. Bake for 35-40 minutes or until the topping is golden brown and the filling is bubbling.
  9. Remove from the oven and let cool completely before slicing into bars.
