Ingredients

Scale
  • 1 pound flank steak or sirloin, thinly sliced against the grain
  • 4 cups fresh broccoli florets (about 300g)
  • 3 cloves garlic, minced
  • 1 tablespoon fresh grated ginger (optional)
  • 1/4 cup low sodium soy sauce (60ml)
  • 2 tablespoons oyster sauce (30ml) or extra soy sauce if unavailable
  • 1 teaspoon brown sugar
  • 1 teaspoon sesame oil
  • 1 tablespoon cornstarch (8g) mixed with 2 tablespoons cold water
  • 2 tablespoons vegetable oil (30ml) for stir-frying
  • Optional: red pepper flakes or fresh chili for heat

Instructions

  1. Slice the beef thinly against the grain into strips about 1/4 inch thick.
  2. In a mixing bowl, combine beef slices with 2 tablespoons soy sauce, 1 teaspoon sesame oil, and 1 tablespoon cornstarch. Toss well and let marinate for 10 minutes.
  3. Wash and cut broccoli into bite-sized florets. Peel and slice thick stalks thinly if needed.
  4. In a small bowl, whisk together 1/4 cup soy sauce, 2 tablespoons oyster sauce, 1 teaspoon brown sugar, minced garlic, and grated ginger. Set aside.
  5. Heat 1 tablespoon vegetable oil in a skillet or wok over medium-high heat. Stir-fry broccoli for about 3 minutes until bright green and tender-crisp. Remove and set aside.
  6. Add remaining 1 tablespoon vegetable oil to the pan, increase heat to high. Stir-fry marinated beef in a single layer for 2-3 minutes until browned and cooked through. Cook in batches if needed.
  7. Return broccoli to the pan with beef. Pour sauce over and stir to combine. Cook 1-2 minutes until sauce thickens and coats beef and broccoli.
  8. Taste and adjust seasoning if needed. Add red pepper flakes for heat if desired.
  9. Serve immediately over steamed rice or noodles.

Notes

Slice beef thinly against the grain for tenderness. Marinate briefly with cornstarch and soy sauce to tenderize and thicken sauce. Avoid overcrowding the pan to ensure proper searing. Keep pan hot and stir frequently to prevent burning. Use tamari or gluten-free soy sauce and check oyster sauce for gluten-free adaptation. Leftovers keep well for up to 3 days; reheat gently with a splash of water or broth.
