  • 3 tablespoons unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup freeze-dried strawberries, crushed into a powder
  • 1 cup vanilla sandwich cookies, crushed
  • 3 tablespoons unsalted butter, melted
  • Fresh strawberries, sliced (optional)
  • Drizzle of white chocolate (optional)

Instructions

  1. Combine graham cracker crumbs and melted butter in a bowl. Press the mixture firmly into the bottom of a parchment-lined 9×9-inch pan. Chill in the fridge while preparing the filling.
  2. In a mixing bowl, beat softened cream cheese and sugar until smooth (about 2-3 minutes). Add eggs one at a time, mixing after each addition. Stir in vanilla extract.
  3. Pour the filling over the crust and smooth the top. Bake in a preheated oven at 325Β°F (160Β°C) for 30-35 minutes or until the edges are set but the center is slightly jiggly. Cool completely.
  4. Crush freeze-dried strawberries and cookies using a food processor. Mix the crumbs with melted butter until evenly combined.
  5. Once the cheesecake is fully cooled, lift it out of the pan using the parchment paper. Cut into 1-inch squares or desired size.
  6. Roll each chunk in the strawberry crunch mixture, pressing lightly to ensure it sticks. Place on a tray and chill for 20 minutes to set.
  7. Drizzle with white chocolate or top with fresh strawberry slices before serving (optional).

Notes

Ensure cream cheese and eggs are at room temperature for a smooth filling. Chill the cheesecake completely before cutting into chunks for clean cuts.
