Perfect Lemon Crumb Bars Recipe with Zesty Filling

  • 2 cups (250g) all-purpose flour
  • 1 cup (200g) granulated sugar
  • 1/2 teaspoon baking powder
  • Pinch of salt
  • 1 cup (226g) unsalted butter, chilled and cubed
  • 4 large eggs
  • 1 1/2 cups (300g) granulated sugar
  • Zest of 2 medium lemons (about 2 tablespoons)
  • 1/2 cup (120ml) freshly squeezed lemon juice
  • 1/4 cup (30g) all-purpose flour

Instructions

  1. Preheat the oven to 350Β°F (175Β°C). Line a 9×13-inch baking dish with parchment paper, letting it hang over the edges for easy lifting later.
  2. In a large mixing bowl, combine the flour, sugar, baking powder, and salt. Add the chilled butter cubes and use a pastry cutter (or two forks) to blend until the mixture resembles coarse crumbs.
  3. Press half of the crumb mixture firmly into the bottom of the prepared baking dish. Bake for 10 minutes, then set aside to cool slightly.
  4. In a medium bowl, whisk together the eggs, sugar, lemon zest, lemon juice, and flour until smooth. Pour the filling over the partially baked crust.
  5. Sprinkle the remaining crumb mixture evenly over the filling.
  6. Return the dish to the oven and bake for 30-35 minutes, or until the topping is golden and the filling is set. It should jiggle slightly but not slosh when gently shaken.
  7. Allow the bars to cool completely in the pan before lifting them out using the parchment paper overhang. Slice into squares or rectangles, and enjoy!
