Perfect Heart Shaped Linzer Cookies

These buttery, nutty heart-shaped Linzer cookies filled with sweet raspberry jam are an easy and charming homemade treat perfect for Valentine’s Day or any special occasion.

  • 1 cup (227 g) unsalted butter, softened
  • 2/3 cup (135 g) granulated sugar
  • 2 large egg yolks, room temperature
  • 1 teaspoon vanilla extract
  • 2 cups (240 g) all-purpose flour
  • 1 cup (100 g) ground almonds (small-curd almond flour recommended)
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon (optional)
  • Seedless raspberry jam (or apricot or mixed berry preserves)
  • Powdered sugar (for dusting)

Instructions

  1. In a large bowl, beat softened unsalted butter with granulated sugar until light and fluffy, about 3-4 minutes.
  2. Beat in egg yolks and vanilla extract until combined and smooth.
  3. In a separate bowl, whisk together all-purpose flour, ground almonds, salt, and ground cinnamon if using.
  4. Gradually add the dry ingredients to the butter mixture and mix on low speed until a soft dough forms. Chill dough in the fridge for 20 minutes if too sticky.
  5. Wrap dough in plastic wrap and refrigerate for at least 1 hour.
  6. Preheat oven to 350Β°F (175Β°C). Line baking sheets with parchment paper or silicone mats.
  7. Roll dough out on a lightly floured surface to about 1/8-inch (3 mm) thickness. Chill briefly if dough softens too much.
  8. Cut half the cookies with a solid heart cutter and the other half with a heart cutter that has a smaller heart cutout in the center. Place cookies about 1 inch apart on baking sheets.
  9. Bake for 10-12 minutes until edges are just golden and centers set. Cool on sheets for 5 minutes, then transfer to wire racks to cool completely.
  10. Spread about 1 teaspoon of raspberry jam on each solid cookie. Top with a cutout cookie and press lightly to sandwich.
  11. Dust assembled cookies with powdered sugar using a fine sieve.

Notes

Keep dough cool to prevent spreading and maintain shape. Chill dough for at least 1 hour before rolling. Use small-curd ground almonds for best texture. Dust powdered sugar after assembling for best presentation. Warm or strain jam if too runny to avoid soggy cookies. Dough can be refrigerated up to 2 days or frozen up to 1 month.
