Perfect Churro Crinkle Cookies

Warm, cinnamon-sugar-coated cookies with a soft, chewy center and crisp edges, inspired by the nostalgic flavor of churros.

  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2 teaspoons cinnamon
  • 1/2 cup powdered sugar (for rolling)
  • 1/4 cup granulated sugar (for coating)
  • 1 teaspoon cinnamon (for coating)

Instructions

  1. Preheat your oven to 350°F (175°C). Line your baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar using an electric mixer until light and fluffy (about 2–3 minutes).
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the all-purpose flour, baking powder, salt, and cinnamon.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined. Be careful not to overmix—the dough should be soft but not sticky.
  6. In a small bowl, mix the granulated sugar and cinnamon for the coating. In another bowl, place the powdered sugar for rolling.
  7. Scoop out dough using a cookie scoop or tablespoon. Roll each ball in the cinnamon-sugar mixture first, then coat generously in powdered sugar.
  8. Place the coated dough balls on the prepared baking sheet, spacing them about 2 inches apart.
  9. Bake for 10–12 minutes, or until the cookies are puffed up and have a crackled surface. The edges should be set but the centers will remain soft.
  10. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack. Enjoy warm or at room temperature!
