  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 24 mini peanut butter cups, unwrapped

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy (about 2-3 minutes).
  3. Mix in the egg and vanilla extract until fully combined.
  4. In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Do not overmix.
  6. Scoop out about 1.5 tablespoons of dough for each cookie and roll into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.
  7. Press a mini peanut butter cup into the center of each dough ball, flattening slightly.
  8. Bake for 10-12 minutes. The cookies will look slightly underbaked but will set as they cool.
  9. Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
