These caramelized honey carrots are a quick and easy side dish that transforms a humble vegetable into a show-stopping, sweet and savory treat. Perfect for holiday dinners, casual meals, or even as a sweet snack.

Ingredients

Scale
  • 1 pound carrots, peeled and cut into uniform sticks or rounds (or use baby carrots)
  • 2 tablespoons honey
  • 1 tablespoon unsalted butter, melted
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon freshly ground black pepper
  • Fresh parsley, optional for garnish

Instructions

  1. Preheat your oven to 400Β°F (200Β°C). Line a baking sheet with parchment paper or foil for easy cleanup.
  2. In a mixing bowl, combine the melted butter, olive oil, honey, salt, and pepper. Whisk until smooth.
  3. Add the peeled and sliced carrots to the bowl. Toss well to coat each piece evenly with the honey mixture.
  4. Spread the carrots out on the prepared baking sheet in a single layer. Avoid overcrowding to ensure even roasting.
  5. Roast the carrots in the preheated oven for 20-25 minutes. Flip them halfway through to ensure both sides caramelize beautifully.
  6. Check for doneness: The carrots should be tender with golden caramelized edges. If needed, roast for an additional 5 minutes.
  7. Remove from the oven and let the carrots cool slightly. Garnish with chopped fresh parsley if desired, and serve warm.
