  • 4 salmon fillets (about 6 oz / 170 g each), skin-on or skinless
  • 1/2 cup (120 ml) champagne or dry sparkling wine
  • 1/2 cup (120 ml) heavy cream
  • 2 tablespoons (28 g) unsalted butter
  • 2 small shallots, finely minced
  • 2 cloves garlic, minced
  • 1 tablespoon (15 ml) lemon juice
  • 1 tablespoon fresh dill, chopped (optional)
  • Salt and freshly ground black pepper, to taste
  • 1 tablespoon (15 ml) olive oil

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease your baking dish.
  2. Pat the salmon fillets dry with paper towels. Drizzle olive oil over each fillet and season generously with salt and freshly ground black pepper. Let them sit at room temperature for about 10 minutes.
  3. In a medium saucepan over medium heat, melt the butter until foamy. Add the minced shallots and sauté for about 2 minutes until softened but not browned.
  4. Add the minced garlic and cook for another 30 seconds until fragrant. Pour in the champagne carefully and bring to a gentle simmer. Let it reduce by about half, about 5-7 minutes.
  5. Lower the heat and stir in the heavy cream and lemon juice. Simmer gently for 3-4 minutes, stirring frequently, until the sauce thickens slightly. Add salt and pepper to taste. Stir in fresh dill if using, then remove from heat.
  6. Place the salmon fillets on the prepared baking sheet or dish, skin-side down if applicable. Bake in the preheated oven for 12-15 minutes, depending on thickness, until the salmon is opaque and flakes easily but remains moist.
  7. Spoon the creamy champagne sauce generously over each fillet and serve immediately.

Notes

If the sauce thickens too much, whisk in a splash of cream or water to loosen it. Avoid overcooking the salmon to keep it moist and flaky. Fresh dill is recommended but optional; tarragon can be used as a substitute. For dairy-free, substitute heavy cream with coconut cream and butter with vegan butter or olive oil.
