  • 1 cup creamy peanut butter
  • 1 cup semisweet chocolate chips
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • 1 ½ cups powdered sugar

Instructions

  1. Measure out 9 cups of Rice Chex cereal and place it in a large mixing bowl. Set aside.
  2. In a microwave-safe bowl, combine 1 cup of creamy peanut butter, 1 cup of semisweet chocolate chips, and 2 tablespoons of unsalted butter. Microwave in 30-second intervals, stirring after each, until smooth. This should take about 1-2 minutes.
  3. Stir in 1 teaspoon of vanilla extract to the melted mixture for an extra boost of flavor.
  4. Pour the chocolate-peanut butter mixture over the cereal and gently toss with a rubber spatula until the cereal is evenly coated. Be careful not to crush the cereal!
  5. Transfer the coated cereal to a large zip-top bag or airtight container. Add 1 ½ cups of powdered sugar, seal the bag, and shake until every piece is fully coated.
  6. Spread the coated cereal onto a baking sheet lined with parchment paper to cool and set for about 15 minutes.
