  • 1 cup creamy peanut butter
  • 2 cups chow mein noodles
  • 1 cup mini marshmallows (optional)
  • 1/2 cup milk chocolate chips (optional)

Instructions

  1. In a microwave-safe bowl, combine the butterscotch chips and peanut butter. Microwave in 30-second intervals, stirring after each, until smooth and fully melted. This should take about 1–2 minutes total.
  2. If using mini marshmallows, stir them into the melted mixture until they’re evenly coated.
  3. Place the chow mein noodles in a large mixing bowl. Pour the melted butterscotch mixture over the noodles and gently toss with a rubber spatula until every noodle is coated.
  4. Using a spoon or your hands, scoop small clusters of the mixture onto a parchment-lined baking sheet. Shape them into stacks or mounds as desired.
  5. Allow the haystacks to cool and set at room temperature for about 30 minutes, or place them in the fridge for quicker setting.
