Ingredients

Scale
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, chilled and cubed
  • 45 tablespoons ice-cold water
  • 1 cup granulated sugar
  • 1/3 cup unsweetened cocoa powder
  • 1/4 cup all-purpose flour
  • Pinch of salt
  • 2 cups whole milk
  • 3 large egg yolks, lightly beaten
  • 1/4 cup unsalted butter
  • 1 teaspoon vanilla extract
  • Whipped cream (optional)
  • Chocolate shavings (optional)
  • Fresh berries (optional)

Instructions

  1. Make the crust: In a mixing bowl, whisk together the flour and salt. Add the cubed butter and use a pastry cutter or your fingers to work it into the flour until the mixture resembles coarse crumbs. Gradually add cold water, one tablespoon at a time, until the dough comes together. Form it into a disc, wrap in plastic wrap, and refrigerate for 30 minutes.
  2. Roll out the crust: On a lightly floured surface, roll out the dough until it’s about 1/8-inch thick. Transfer it to the pie dish, gently pressing it into the corners. Trim any excess dough, leaving a slight overhang, and crimp the edges. Pre-bake the crust at 375°F (190°C) for 10 minutes, then set aside.
  3. Prepare the filling: In a medium saucepan, whisk together sugar, cocoa powder, flour, and salt. Gradually add milk, whisking continuously to prevent lumps. Cook over medium heat until the mixture thickens, about 8-10 minutes.
  4. Temper the eggs: Slowly pour 1/2 cup of the hot chocolate mixture into the beaten egg yolks, whisking constantly. This prevents the eggs from scrambling. Return the tempered mixture to the saucepan.
  5. Finish the filling: Cook for another 2 minutes, stirring constantly, then remove from heat. Stir in butter and vanilla extract until smooth.
  6. Assemble the pie: Pour the chocolate filling into the pre-baked crust, spreading evenly. Allow the pie to cool at room temperature for about 30 minutes, then refrigerate for at least 2 hours to set.
  7. Serve: Top with whipped cream, chocolate shavings, or fresh berries before serving.
