Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8-inch round cake pan with parchment paper or lightly grease it.
  2. In a blender or food processor, grind 2 cups of rolled oats into a fine flour. Set aside.
  3. Grate 2 cups of fresh carrots using a box grater and set them aside.
  4. In a large mixing bowl, whisk together 2 large eggs, 1/2 cup maple syrup, 1/2 cup unsweetened applesauce, and 1 teaspoon vanilla extract until smooth.
  5. Add the oat flour, 1 teaspoon baking powder, 1 teaspoon cinnamon, 1/4 teaspoon nutmeg, and a pinch of salt to the wet mixture. Stir until combined.
