A light, refreshing, and easy-to-make summer cookout recipe combining juicy watermelon, creamy feta, and fresh mint on skewers. Perfect for quick snacks or appetizers that balance sweet, salty, and herbal flavors.

Ingredients

  • Seedless watermelon, cut into 1-inch cubes
  • Block feta cheese, cut into 1-inch cubes or crumbled by hand
  • Fresh spearmint leaves, small and tender
  • Extra virgin olive oil, for drizzling
  • Freshly ground black pepper, a pinch
  • Fresh lime juice (optional), a squeeze
  • Wooden skewers, soaked in water for 10 minutes

Instructions

  1. Soak wooden skewers in cold water for at least 10 minutes to prevent burning if grilling.
  2. Cut seedless watermelon into 1-inch cubes, aiming for uniform size.
  3. Cube or gently crumble block feta cheese into roughly 1-inch pieces.
  4. Rinse and pat dry fresh spearmint leaves; use whole small leaves or tear larger ones into bite-sized pieces.
  5. Assemble skewers by threading one watermelon cube, one mint leaf, then one feta cube; repeat if skewer length allows, aiming for 3–4 pieces per skewer.
  6. Place assembled skewers on a serving platter. Drizzle with extra virgin olive oil and squeeze fresh lime juice over them if desired. Lightly sprinkle with freshly ground black pepper.
  7. Chill skewers in the refrigerator for 10–15 minutes before serving or serve immediately at room temperature.

Notes

Use block feta crumbled by hand for creamier texture. Prefer fresh spearmint over peppermint for milder flavor. Soak wooden skewers before grilling to prevent burning. Assemble skewers shortly before serving to keep watermelon firm and mint fresh. Optional: briefly grill watermelon cubes 1-2 minutes per side for smoky flavor. Store leftovers in airtight container up to 24 hours; drizzle oil and lime juice just before serving again.
