  • 8 oz (225 g) cream cheese, softened
  • 1 tsp lemon zest
  • 2 tbsp fresh herbs (dill, parsley, or chives), finely chopped
  • 1 medium carrot, julienned
  • 1 small English cucumber, thinly sliced
  • 1 small red bell pepper, thinly sliced
  • 1 cup (30 g) baby spinach, packed
  • Salt and pepper to taste
  • Optional: drizzle of honey or sprinkle of smoked paprika

Instructions

  1. Prepare the cream cheese spread: In a mixing bowl, soften the cream cheese. Add lemon zest and finely chopped fresh herbs. Mix until smooth and creamy. Season with salt and pepper.
  2. Prep the veggies: Julienne the carrot, thinly slice the cucumber and red bell pepper, and rinse and pat dry the baby spinach.
  3. Spread the cream cheese mixture evenly over one tortilla, leaving about a half-inch border around the edges.
  4. Layer the prepared veggies evenly over the cream cheese spread.
  5. Roll the tortilla tightly into a log, wrap with plastic wrap or parchment paper, and chill in the fridge for at least 10-15 minutes.
  6. Remove from fridge, unwrap, and slice into 1-inch thick pinwheels. Arrange on a platter and serve immediately or keep chilled until ready.

Notes

Soften cream cheese at room temperature or microwave briefly for easier spreading. Thinly slice veggies for easier rolling. Chill roll-ups before slicing to prevent squishing. Use fresh, pliable tortillas to avoid tearing. Optional flavor twists include adding pesto or sun-dried tomato paste to cream cheese or brushing garlic butter on tortillas before spreading.
