A quick and easy recipe featuring shredded chicken tossed in a homemade Caesar dressing, served in crisp romaine lettuce leaves for a light, refreshing summer meal.

  • 2 cups cooked chicken, shredded (rotisserie or grilled chicken)
  • 1/4 cup grated Parmesan cheese
  • 1/2 cup croutons, crushed
  • 2 tablespoons mayonnaise (light mayo optional)
  • 1 teaspoon anchovy paste (optional)
  • 1 small garlic clove, minced
  • 1 tablespoon lemon juice, freshly squeezed
  • 1 teaspoon Dijon mustard
  • 2 tablespoons grated Parmesan cheese
  • 2 tablespoons olive oil, extra virgin
  • Salt and black pepper to taste
  • 1 head romaine lettuce, leaves separated and washed
  • Optional: Cherry tomatoes, halved
  • Optional: Fresh cracked black pepper for garnish

Instructions

  1. Carefully separate the romaine leaves, wash thoroughly, and dry well using a salad spinner or kitchen towel. This should take about 5 minutes.
  2. In a medium bowl, whisk together mayonnaise, anchovy paste, minced garlic, lemon juice, Dijon mustard, and Parmesan cheese until smooth. Slowly drizzle in olive oil while whisking continuously to create a creamy emulsion. Add salt and black pepper to taste. This takes about 5 minutes.
  3. In a large bowl, combine shredded chicken with about 3 tablespoons of the Caesar dressing. Toss gently until chicken is coated but not drenched. Stir in crushed croutons and Parmesan cheese. This takes about 3 minutes.
  4. Lay out romaine leaves on a flat surface. Spoon a generous amount of chicken mixture into the center of each leaf. If using, add halved cherry tomatoes on top. Sprinkle with extra cracked black pepper if desired. This takes about 5 minutes.
  5. Serve immediately while lettuce is crisp and flavors are fresh. If needed, cover loosely with plastic wrap and refrigerate for up to 1 hour to prevent sogginess.

Notes

Use two forks to shred chicken for easy wrapping. Avoid overdressing chicken to prevent soggy lettuce. Prepare dressing first to let flavors meld. Substitute Greek yogurt for mayo or use avocado-based dressing for dairy-free option. Crushed pork rinds or toasted nuts can replace croutons for low-carb crunch.
