A crisp and refreshing apple slaw featuring juicy apples, crunchy cabbage, and a creamy, tangy dressing. Perfect for fall gatherings or as a versatile side dish.

  • 2 medium-sized apples, cored and julienned (Honeycrisp or Gala)
  • 4 cups green cabbage, finely shredded
  • 1 cup carrots, grated or julienned
  • 1/4 cup red onion, thinly sliced (optional)
  • 2 tablespoons fresh parsley, chopped
  • 1/3 cup mayonnaise
  • 1/3 cup Greek yogurt
  • 2 tablespoons honey
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Wash and dry the apples, cabbage, and parsley. Core and julienne the apples, shred the cabbage, grate the carrots, and chop the parsley.
  2. In a small bowl, whisk together mayonnaise, Greek yogurt, honey, apple cider vinegar, Dijon mustard, salt, and pepper until smooth and creamy.
  3. In a large mixing bowl, add the apples, cabbage, carrots, red onion, and parsley.
  4. Pour the dressing over the slaw mixture and gently toss until everything is evenly coated.
  5. Cover and refrigerate for 15 minutes to let the flavors meld together (optional).
  6. Transfer to a serving dish and garnish with extra parsley if desired.

Notes

For extra crunch, add toasted pecans or slivered almonds. Toss apples with lemon juice to prevent browning. Pre-shredded cabbage can be used for convenience.
