A quick and easy refreshing drink combining crisp cucumber and vibrant mint, perfect for hot days and casual gatherings.

  • 2 large cucumbers, peeled and roughly chopped (English cucumbers recommended)
  • 1/2 cup fresh mint leaves, packed (spearmint or peppermint)
  • 1/4 cup fresh lime juice (about 2 limes)
  • 4 cups cold filtered water
  • 1/4 cup sugar (adjust to taste; can substitute with honey, agave syrup, stevia, or monk fruit sweetener)
  • Ice cubes, as needed for serving

Instructions

  1. Peel the cucumbers and chop roughly into 1-inch pieces (about 2 large cucumbers or 1 pound).
  2. Add chopped cucumbers and 1/2 cup fresh mint leaves to a blender. Pour in 4 cups cold filtered water.
  3. Blend on high for 1-2 minutes until smooth and bright green.
  4. Pour the blended mixture through a fine mesh strainer or cheesecloth into a large bowl or pitcher. Press the pulp with a spoon to extract as much juice as possible. Discard or save pulp for smoothies.
  5. Stir in 1/4 cup sugar and 1/4 cup freshly squeezed lime juice until sugar dissolves. Taste and adjust sweetness or lime juice as desired.
  6. Refrigerate for at least 30 minutes to let flavors meld.
  7. Serve chilled over ice cubes, garnished with a sprig of fresh mint or thin cucumber slices.

Notes

Use English cucumbers for fewer seeds and better texture. Avoid over-blending to prevent bitterness. Adjust sugar to taste or substitute with natural sweeteners. Chill for at least 30 minutes for best flavor. Muddle extra mint leaves in glass for stronger mint flavor. Store leftovers refrigerated up to 2 days and stir before serving.
