A quick and easy healthy breakfast parfait featuring a warm fresh berry compote layered with creamy Greek yogurt and crunchy granola. Perfect for busy mornings or brunch with family and friends.

  • 2 cups fresh or frozen mixed berries (blueberries, strawberries, raspberries, blackberries)
  • 2 tablespoons pure maple syrup or honey
  • 1 teaspoon fresh lemon juice
  • 1/2 teaspoon vanilla extract (optional)
  • 2 cups Greek yogurt (full-fat or 2%)
  • 1 tablespoon honey or agave (optional)
  • 1 1/2 cups granola (with oats, nuts, and cinnamon)
  • Fresh mint leaves (optional, for garnish)
  • Chia seeds or flaxseeds (optional, for added nutrition)

Instructions

  1. Rinse fresh berries gently if using fresh. Place 2 cups of mixed berries in a medium saucepan over medium heat. Add 2 tablespoons maple syrup (or honey), 1 teaspoon fresh lemon juice, and 1/2 teaspoon vanilla extract. Stir gently to combine.
  2. Let the mixture come to a simmer. Cook uncovered for about 10 minutes, stirring occasionally, until berries break down and the compote thickens slightly but still has some whole berries.
  3. Remove from heat and let cool to room temperature. For a smoother texture, press the compote through a fine mesh sieve to remove seeds.
  4. In a mixing bowl, combine 2 cups Greek yogurt with 1 tablespoon honey or agave if desired. Stir until smooth and creamy. Adjust sweetness to taste.
  5. To assemble, spoon yogurt into the bottom of parfait glasses. Add a layer of berry compote, then sprinkle a generous handful of granola. Repeat layering once more, finishing with granola on top.
  6. Garnish with fresh mint leaves or sprinkle chia seeds on top. Serve immediately for best crunch or chill briefly if preferred.

Notes

Use fresh berries in summer for best flavor; frozen berries work well if thawed slightly. To keep granola crunchy, add it just before serving or serve on the side. Berry compote can be made a day ahead and refrigerated. For dairy-free, use coconut or almond yogurt and gluten-free granola.
