Fluffy Breakfast Rolls with Bacon & Cheese

Warm, fluffy breakfast rolls filled with crispy bacon and gooey cheese, perfect for brunch or a cozy morning treat.

  • 1/4 cup granulated sugar
  • 1 teaspoon salt
  • 2 1/4 teaspoons active dry yeast
  • 1 cup warm milk (about 110Β°F/43Β°C)
  • 1/4 cup unsalted butter, melted
  • 1 large egg, room temperature
  • 6 strips bacon, cooked and crumbled
  • 1 1/2 cups shredded cheddar cheese
  • 2 tablespoons chopped fresh chives (optional)
  • 1 large egg, beaten (for egg wash)
  • 1 tablespoon melted butter (optional)

Instructions

  1. In a large mixing bowl, combine the warm milk, sugar, and yeast. Let it sit for 5-10 minutes until frothy. Add the melted butter, egg, salt, and flour. Mix until a shaggy dough forms.
  2. Turn the dough out onto a floured surface and knead for 8-10 minutes (or use a stand mixer with a dough hook for 5-6 minutes). The dough should be smooth and elastic.
  3. Place the dough in a lightly greased bowl, cover with a damp towel, and let it rise for 1-2 hours in a warm spot until doubled in size.
  4. While the dough rises, cook the bacon until crispy, then crumble it into small pieces. Grate the cheese and chop the chives, if using.
  5. Once risen, punch down the dough and transfer it to a floured surface. Roll it into a rectangle, about 12×18 inches.
  6. Evenly spread the crumbled bacon and shredded cheese over the dough, leaving a 1-inch border around the edges. Sprinkle with chives for extra flavor.
  7. Starting from one long side, roll the dough tightly into a log. Pinch the seam to seal, then slice the roll into 12 equal pieces.
  8. Arrange the rolls on a parchment-lined baking sheet, cover, and let them rise for another 30-45 minutes.
  9. Preheat your oven to 375Β°F (190Β°C). Brush the rolls with beaten egg and bake for 18-22 minutes, or until golden brown. For extra shine, brush them with melted butter as soon as they come out of the oven.
