  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsalted butter for cooking
  • Optional toppings: maple syrup, powdered sugar for dusting, fresh mint leaves

Instructions

  1. Prepare the cream cheese filling by beating softened cream cheese with powdered sugar and vanilla extract until smooth and creamy. Set aside.
  2. Slice each brioche slice and carefully cut a pocket into the center without cutting all the way through.
  3. Stuff each bread pocket with about 2 tablespoons of cream cheese filling and a generous tablespoon of blueberries. Press gently to close.
  4. In a large bowl, whisk together eggs, milk, granulated sugar, cinnamon, and vanilla extract until combined and slightly frothy.
  5. Dip each stuffed bread slice into the custard mixture, soaking about 20-30 seconds per side without oversoaking.
  6. Heat butter in a non-stick skillet over medium heat. Cook the soaked bread slices for 3-4 minutes per side until golden brown and cooked through.
